Labor day has passed and summer is giving us it’s last little heat wave before fall sets in. Bring in the pumpkin spiced latte’s and fall weather because it’s time to get ready for the holidays. But, we can’t end the summer without one last hurrah, and what better way to do it with a great BBQ and some Creamy Jalapeño Honey Coleslaw. I have the perfect Creamy Jalapeño Honey Coleslaw just for you. I’ve seen several renditions of the this coleslaw, but everything I saw was more like a vinaigrette rather than a true coleslaw. So I thought I would take this Creamy Jalapeño Honey Coleslaw to the next level.
Labor Day Weekend
I was fortunate enough to spend my labor day holiday down in San Diego this year. I hadn’t been to San Diego since I was a little, little girl with my mom. She took me to Sea World and the San Diego Zoo while we were there. I have no memories of any of it except for what I have seen in the photographs. I do remember one thing about that trip though, I took my very first photograph with a camera. It was a picture of some bird at the zoo. That one picture started my love affair with photography. I always loved taking photos of people in the moment. Those special or funny moments that you want to record, because if you don’t capture them on camera, they will long be forgotten. Little did I know my love affair with the camera would bring me to food photography. I can simply look at food pics for hours and hours. Can’t you? I can’t think of a better way to join one love with another, that being food and photography of course.
Enough about my love of food and photography. While I was down there, I got to see some family that I literally had not seen since high school. It was fun and interesting to see cousins all grown up, living their lives and vice versa. I usually get the “wow, I didn’t realize how short you are” comment from everyone. I will never live that one down will I? Probably not! I also got to meet one of my devoted blog readers – Doni you know I’m talking about you! It was fun to meet someone who has followed me on my blogging journey and enjoy some really good food to. Sausage and Meat Co will always be my favorite spot when I go to San Diego from now on. It was fun to spend time with Doni and her daughter and hear about her story of going paleo, and how it has helped her and her family’s lifestyle. While we are both still struggling with our health issues, we could be far worse off, couldn’t we Doni? Either way, we enjoyed some awesome bacon and good bloody mary’s while I was there. And I truly adore my Frankenstein wine bag that came with a lovely bottle of Extra Virgin Olive Oil. I just need the couch pillow to match it (wink wink). If you ever want to take a vacation and have lots of paleo friendly restaurants to choose from San Diego is definitely a must. I hope you enjoyed the last holiday of the summer too.
Creamy Jalapeno Honey Coleslaw
- 1/2 Purple Cabbage, sliced into thin ribbons
- 1/2 Green Cabbage, sliced into thin ribbons
- 5 Carrots, julienned (or more)
- 1/2 cup Sir Kensington Mayonnaise using Avocado Oil (or more depending on the volume of veggies)
- 1 to 1 1/2 Jalapeños, seeded and minced
- 1 tbsp Honey
- Pinch of Sea Salt
- Juice of 1/2 a Lime
- Using a mandoline or a spiralizer, prepare your cabbage. For the carrots I used a julienne vegetable peeler. For the jalapeño, I used a fine cheese grater, or a microplane grater.
- In a large bowl, mix together all of the ingredients and then refrigerate overnight.
It’s best to make this recipe the day before and refrigerate it overnight. This will allow all the flavors to marinate and really show themselves well. Pair with any bbq dish and enjoy!
One of my favorite ways to pair this creamy jalapeño honey coleslaw is with is a juicy pulled pork slider. It will definitely finish your summer out quite perfectly.
Falls is Coming (Insert John Snow voice here…lol)
Now that fall is about to set in, it’s time to pull out all the spices and fall vegetables. Before you know it, Christmas will be here and we’ll all be around the tree opening gifts and enjoying all of our favorite holiday dishes. So what would you like to see this fall from Kitchen Vixxen?
